Sebastian Ramirez is an award-winning coffee producer. He started by utilizing conventional growing and processing methods, but after some time ventured into experimental processing and fermentation techniques. These days, he focuses mostly on processing both coffees grown on his own farm, El Placer, and coffees from neighboring farms in Quindío and Hulia. He also is a mentor in Unblended’s Young Producer Program where he gets to pass his knowledge on to a new generation of coffee producers and help them grow. Pink Bourbon is one of the varietals grown at El Placer. It’s a washed process that is fermented with its own mucilage in tanks for 24 to 36 hours before being dried on open patios for around 5 days.
This coffee turned out very sweet, floral, and delicate. Look for notes of Bergamot, Apricot, and Anise when you brew.
